BURPAN MILK AND PURPOSES
We have been granted permission to sell raw milk by our Ministry. With this permission, BURPAN milk establishment is a free enterprise and started a project to deliver raw milk, which produced without touching, to the kitchens. The purpose of this project is to ensure that cow and goat breed produced in healthy conditions are delivered to the people comfortably. Within the scope of this project, dealerships were given to the water distribution companies operating in Gaziantep. Specially manufactured cabinets are allocated to these dealers so that they can maintain the milk. Cow and goat milks are packed under the name of Suutcu brand as 2,5 and 5 kg packages by closing with sealed covers after filling. Suutcu has established a system which provides delivery to the dealers with refrigerated vehicles every morning and delivery to the houses in the day.

HOW CAN YOU MAKE GAZİANTEP CHEESE WITH SUUTCU'S MILK?
We pug our milk to the pot by filtering. We put our cold milk on the oven. We heat it up to 40 degrees. (If your don't have thermometer, you can measure it by touching it with your small finger; you will feel the heat but your finger will not burn.) When you take your milk that is 40 degrees, it is ready to be fermented. You should determine the amount of fermenter according to the amount of your milk. You will see that it becomes a dark yoghurt after waiting one hour for fermentation. You should mix the milk in the pot well with help of a spoon. You will see that the milk's water will be separated as clots as result of mixing. With help of a cheesecloth, you will clear the clotted curd from the water. You will keep the clotted curd on the cheesecloth under pressure for an hour. Take the remaining water from your filter into a pot and let it boil. You will put lemon and salt in your boiling water according to the amount mentioned below. Within 5-10 minutes, the cheese water will form clots. Collect the resulting clots into a cheesecloth with help of a strainer. These collected pods will become lorries. Cut the clotted curds in the pressed cheesecloth to the desired sizes and after taking the curd cheese, throw it into the remaining boiling water and leave for 10 minutes. Take the cheese from the water to a container and put it in the refrigerator. You can enjoy your cheese after waiting for a couple of hours.
